Zucchini is one vegetable variety that can be used in many different ways. Whether for a quiche, omelette, or salad — raw, grilled, or baked — somehow everything works. If you’re a fan, now you can add another recipe to your collection: delicious stuffed zucchini rolls.
Stuffed Zucchini Rolls

Ingredients
- 1 zucchini
- olive oil
- bread crumbs
- 100 g ham optional for vegetarian version
- 125 g mozzarella sliced
Instructions
- Wash the zucchini and cut it lengthwise into six strips. Coat each strip in olive oil, using your fingers to remove the excess oil. Afterwards, coat each side in breadcrumbs.
- Place the strips onto a baking sheet and bake for five minutes at 320 °F.
- Place a slice of ham along with a slice of mozzarella onto each breaded zucchini strip, and roll tightly. To hold them together, thread a skewer through three of the rolls. Now bake for another 12 minutes at 350 °F.

These little rolls not only taste wonderful, but will also look great on any party buffet table. For a vegetarian option, just leave out the ham! Alternatively, you can try this recipe using eggplant, carrot, or sweet potato slices. Enjoy!
