Zucchini Beef Roll

- Hand mixer

Ingredients
- 2 zucchinis
- 8 eggs
- 3 cups shredded cheddar cheese
- 2 lbs ground beef
- 1 onion, diced
- 2 garlic cloves, minced
- 1 tbsp rosemary
- 2 tbsp tomato paste
- 2 tbsp ketchup
- salt, pepper & nutmeg to taste
Instructions
- Slice the zucchinis, salt the pieces, and let sit for 10 minutes. Place the softened zucchini slices on a baking tray lined with parchment paper.
- Beat the eggs, salt, pepper, and nutmeg with a hand mixer until creamy and pour the mixture over the zucchini slices.
- Transfer the baking tray to a preheated oven and cook at 350°F for 15 minutes.
- Heat some olive oil in a pan over medium heat and brown the ground beef. Add the onion, garlic, salt, pepper, rosemary, tomato paste, and ketchup and mix well. Let the ground beef filling simmer for 10 minutes over low heat, stirring regularly.
- Sprinkle shredded cheddar cheese over the zucchini egg sheet and spoon the ground beef filling on top.
- Use the parchment paper to carefully roll the zucchini egg sheet up into a tight log.
- Place the zucchini beef roll on a baking tray lined with parchment paper, transfer the baking tray to the oven, and cook at 350°F for 15 minutes.
