Equipment

  • Food processor
  • Piping bag
  • Oven
  • 12 x 4-inch ovular baking pan
  • Pringles can

Ingredients

  • 0.5 lb beef
  • 1 lb pork
  • 1 cup crushed ice
  • 1 tbsp salt or curing salt
  • 1 oz Pringles
  • 0.33 cup ketchup
  • cooking oil for frying
  • 1 tsp white pepper
  • 1 tsp ground ginger
  • 1 tsp nutmeg
  • 1 tsp ground coriander
  • 2 tsp smoked paprika
  • 1 tbsp onion powder
  • 1 tsp garlic powder
  • 1 tsp dextrose sweetener
  • 4.5 cups flour
  • 1 tbsp dry yeast
  • 1.5 tbsp sugar
  • 2 tsp salt
  • 0.67 cup lukewarm water
  • 0.5 cup lukewarm milk
  • 1 egg
  • 0.25 stick butter, softened
  • ketchup for topping
  • mustard for topping
  • crispy fried onions for topping
  • pickles for topping
  • additional Pringles crushed, for topping

Instructions

  • Place the pork and beef in a food processor and blend until ground. Add in the seasoning blend, Pringles, and ⅓ of the crushed ice. Blend everything on the highest setting for 30 seconds. Add in another portion of ice and repeat this process 2 more times until you've used all of the crushed ice. Once everything is combined, blend in the curing salt.
  • Blend everything together on the highest setting one last time, making sure the temperature of the meat doesn't rise above 50°F. Transfer the mixture to a piping bag.
  • Preheat the oven to 200°F. Clean out the empty Pringles can and poke small holes in the bottom of it. Pipe the meat mixture into the cleaned can, pressing it down sporadically in order to remove any pockets of air.
  • Transfer the Pringles can to the oven and bake the XXL hot dog for 2 hours and 30 minutes at 200°F. Once it has baked, remove the can from the oven and let it cool for 10 minutes, then remove the XXL hot dog from the can.
  • Combine the warm water and milk, then add in the sugar and dry yeast. Leave the mixture in a warm spot and let it rest. Add in the flour, salt, egg, and softened butter and knead everything together until a smooth dough forms. Place the dough in a resealable plastic bag and let it rise for 30 minutes in a warm spot.
  • Preheat the oven to 350°F and grease a 12 x 4-inch ovular baking pan. Next, knead the dough one more time, then transfer it to the oven and bake it at 350°F for 30 minutes.
  • Once the XXL hot dog bun has baked, slice a deep V out of the top so that the XXL hot dog will fit inside.
  • Coat the XXL hot dog with vegetable oil and fry it on all sides until golden brown. Coat the surface of the fried hot dog with ketchup before you finish frying it.
  • Place the cooked XXL hot dog in the bun, then top it off with ketchup, mustard, crispy fried onions, and pickles. Finally, crush up some additional Pringles and sprinkle them on top.
