Ingredients
  

  • 1-2 large potatoes
  • 2 tbsp parmesan
  • 1/3 cup tomato sauce
  • 1 tsp oregano
  • 1 mushroom
  • 4 oz mozzarella
  • 1 egg
  • 3 slices prosciutto
  • to taste pepper

Instructions
 

  • Preheat your oven to 200°C (392°F). Slice the potatoes into thin rings and arrange them in a circular pattern on a baking sheet.
  • Sprinkle the potato rings with parmesan and bake for 10 minutes until they start to crisp up.
  • Spread the tomato sauce over the baked potato rings. Add oregano, sliced mushroom, mozzarella, and prosciutto. Crack an egg in the center.
  • Bake for another 10 minutes until the cheese is melted and the egg is cooked to your liking. Garnish with pepper and serve hot.
