Strawberry Shortcake Surprise with Homemade Vanilla Pudding

A delightful strawberry shortcake cookie house filled with a fluffy layer of cake, homemade vanilla pudding, and topped with fresh strawberries and whipped cream.

Ingredients
  

  • 3 oz butter cubed
  • 3 tbsp powdered sugar
  • 1 pinch salt
  • 2 tbsp liquid eggs ½ whisked egg
  • 1.5 tbsp ground almonds
  • 5 oz flour
  • 10 fl oz milk
  • 1 tbsp sugar
  • 1 egg yolk
  • 2 tbsp starch
  • 1 vanilla bean
  • square cake layer sponge cake or pound cake work best
  • melted milk chocolate
  • strawberries
  • whipped cream

Instructions
 

  • Knead until smooth, and refrigerate for an hour. Meanwhile, preheat the oven to 375°F. Once the dough has chilled, flour your work surface, roll out the dough, and cut out one 4 x 4 inch square and four 2 x 4 inch rectangles. Bake for 10 minutes and let the shortcake cookies cool before moving on to the next step.
  • The square cookie piece will be the base of your 'house.' Spread the melted milk chocolate on the edges of the rectangle cookies and stick one on each side of the square cookie base to assemble the house. Leave one side open for now.
  • Cut a square piece of sponge cake or pound cake to fit inside the cookie house, place it on the square cookie base, and attach the last rectangle cookie with the melted chocolate.
  • Pour the milk into a medium pot, stir in the contents of the vanilla bean, and bring to a boil. Add the egg, sugar, and starch, and whisk until a smooth pudding forms.
  • Fill the shortcake house with the vanilla pudding and smooth the top out with a spoon. Decorate with fresh strawberries and dollops of whipped cream for a berry nice treat.
