Cheesy Hash Browns

Ingredients
  

  • 4 medium potatoes
  • 2 eggs
  • 2 tbsp melted butter
  • 4.5 oz shredded cheddar
  • 1/3 cup chives
  • 1 clove garlic, chopped
  • 1 tsp oregano
  • salt and pepper to taste

Instructions
 

  • Peel and grate the potatoes and add to a bath of ice water. Stir and soak for 10 minutes. This will make the potatoes extra crispy later.
  • Pour out the water and squeeze out the excess. Add all the ingredients to the bowl and mix well.
  • Take a good handful of shredded potato mixture and form it into an oval, then place on a baking sheet.
  • Bake for 20 minutes at 390 °F.

Notes

As if these crispy creations didn't have enough flavor on their own (and trust us, they do!), feel free to serve them with a side of sour cream or your favorite dipping sauce. If you plan on adding these to your usual weekend routine, try mixing it up a bit with sweet potatoes or a more exotic selection from the cheese counter. Remember, if you just wanted ordinary hash browns, you could have gone out for breakfast!
