Separate the egg white and the yolk, placing the yolk on the side. Beat the egg white stiff, adding the parmesan.
Transfer the egg white to a greased baking sheet and bake for 3 minutes at 350°F. After this time, gently pour the yolk into the middle of the "cloud," and bake for another 2 minutes.
