Equipment

  • Large Pan
  • Small pan
  • Springform pan

Ingredients

  • 750 g ground beef
  • 1 tsp salt
  • 0.5 tsp pepper
  • 1 chopped onion
  • 125 g diced bacon
  • 2 diced carrots
  • 100 g diced rutabaga
  • 125 g chopped mushrooms
  • 0.5 tsp oregano
  • 0.5 tsp rosemary
  • 50 g butter
  • 30 g flour
  • 500 ml stock
  • 225 g cold butter, in cubes
  • 300 g flour
  • 1 tbsp sugar
  • 1 tsp salt
  • 125 ml buttermilk

Instructions

  • Heat some oil in a large pan and brown the ground beef in it. Season the meat with salt and pepper and then add the onion as well as the bacon. Mix in the vegetables and add the rosemary and oregano. Take the pan off the heat.
  • Melt the butter in a small pan and stir in the flour with a whisk. Add in the stock and allow it to cook, before adding the broth to the ground meat and vegetables.
  • Knead together the ingredients for the shortcrust pastry and place the dough in the fridge for 30 minutes. After it has been chilled, roll out two thirds of the dough until it's about ⅛ in thick on a work surface covered in flour. Then place the dough in a springform pan 7 inches in diameter. Leave any excess dough that hangs over the edge.
  • Fill the pie with the ground meat and vegetables. Roll the rest of the dough into a circle large enough to make a pastry lid. Place it over the filling and pinch the edges together with the excess dough from earlier. Lastly, cut a cross in the pie crust, then bake the whole thing for 50 minutes in a convection oven at 320°F.
