Sumptuous Turducken Recipe

Cook Time 4 hours
Course Main Dishes

Equipment

  • Roulade skewer
  • Cooking string

Ingredients

  • 3.5 oz prunes
  • 3.5 oz dried apricots
  • 3.5 oz dried cranberries
  • 2 lb bread day-old
  • 5 eggs
  • 1 oz parsley
  • 1.5 tbsp chopped thyme
  • salt & pepper
  • 3.5 oz butter
  • 2 diced onions
  • 24 fl oz milk
  • 1 turkey 13-18 lb
  • 1 duck 4-7 lb
  • 1 chicken 2-3 lb
  • lingonberry for garnish
  • red cabbage

Instructions

  • Cut the bread into pieces. We recommend using day-old bread. Next, cut the prunes, apricots, and cranberries into small pieces, and add them to the bread. Now add the five eggs, parsley, thyme, salt, and pepper to the bowl.
  • Melt the butter in a pan and sweat the onions until they're translucent. After adding milk, transfer the mixture to the bowl containing the bread and mix everything well.
  • Next, cut the turkey open, remove the bones and giblets, season well, and spread the stuffing onto it.
  • Now cut the duck open and remove the bones. Lay it out flat on top of the turkey, season well, and spread on the stuffing.
  • Finally, cut open the chicken and remove the bones. Lay it out flat on top of the duck, season well, and spread the stuffing over it.
  • It's now time to put the turkey back together. Do so by carefully sewing it together using the roulade skewer and cooking string.
  • Finish by tying the turkey's legs together and cook your turducken at 360°F for four hours.
  • Once it's done, you can serve it with lingonberries and red cabbage to give the bird an extra fruity note.
