Tiger Carrot Cake
Equipment
- Blender
- Bundt cake pan
- Plastic Bottle
- Piping bag
Ingredients
- 5 carrots peeled
- 1 1/3 cups vegetable oil
- 5 eggs
- 1 1/2 cups sugar
- 3 cups flour
- 3 tbsp cocoa powder
- 3 tsp baking powder
- 2/3 cup milk
- 2 tbsp corn starch
- 4 cups powdered sugar
- 2/3 cup lemon juice
- black & orange food coloring
- almond paste
Instructions
- Preheat the oven to 350°F. Peel the carrots, cut them into small pieces, and place them in a blender. Add the eggs and vegetable oil to the blender and blend until smooth.
- Pour the blended carrot mixture into a large mixing bowl, add in the sugar, flour, baking powder, and milk, and mix everything together until combined. Pour half of the batter into a new mixing bowl and stir in the cocoa powder to give it a brown color.
- Grease and flour a bundt cake pan, then press 3 small, evenly-spaced pieces of almond paste onto the edge of the hole in the center of the pan.
- Cut off the bottom of an empty plastic bottle, wash it thoroughly, and place it on top of the almond paste.
- Pour a small amount of the orange cake batter directly onto the plastic bottle attached to the bundt cake pan. Pour the same amount of brown cake batter on top, then continue alternating between the orange and brown batter until both batters have been used up.
- Remove the plastic bottle and almond paste from the bundt cake pan, transfer to the oven, and bake at 350°F for 1 hour.
- For the glaze, stir together the powdered sugar and lemon juice until smooth. Divide the glaze into 2 bowls, leaving 1/4 in one bowl and 3/4 in the other. Stir orange food coloring into the bowl with more glaze and black food coloring into the one with less. Once the cake has cooled completely, place it on a large plate and generously pour the orange glaze over it. Transfer the black glaze to a piping bag and pipe thin black stripes over the top of the cake. Let the glaze harden, and your tiger cake is ready to be served!
