A taco is originally a Mexican fast food dish, consisting of a filled tortilla. But what about using alternatives for the casing? Like tomatoes for example — which you can also stuff with ground beef, as the following video shows.
Stuffed Taco Tomatoes
Ingredients
- 4 tomatoes
- 12 oz ground beef
- 1 onion, diced
- 1 garlic clove, finely chopped
- 1 tsp cumin
- 1 tbsp chili powder
- salt and pepper to taste
- cheddar, grated
- salad leaves in fine strips
- sour cream
Instructions
- Fry the beef with the chopped onion and season it with the garlic, chili, cumin, salt, and pepper. Then take the pan off the heat.
- Place each tomato on a board with the stems facing down. Cut them to form a six-pointed star, taking care not to cut completely through the tomato.
- Spread the six segments carefully and fill the tomato with the cooked and seasoned beef. Top with cheddar, salad strips, and a blob of sour cream.

This type of tomato has a long history in Central America — they were cultivated by the Mayans — so even before we tried using them as tacos, they already had something in common with tortillas! Make up a batch and share them with your friends (:
