Ingredients

  • 2 lbs sushi rice
  • 67.5 fl oz water
  • 2.5 fl oz rice vinegar
  • 1.5 oz sugar
  • 1 tbsp salt
  • 4 carrots
  • 17.5 oz surimi
  • 3.5 tbsp chili sauce
  • 3 tbsp soy sauce
  • 2 tbsp sesame oil
  • 1 tsp ginger
  • lemon zest
  • 0.5 lemon (juice)
  • 17.5 oz Japanese seaweed salad (wakame)
  • 0.5 cucumber
  • 17.5 oz tuna
  • 2 avocados
  • 17.5 oz white fish
  • 17.5 oz salmon
  • 1 tsp white sesame seeds
  • 1 tsp black sesame seeds
  • 2 spring onions

Instructions

  • Wash the rice three times until the water becomes very clear. Drain the water, pour in 67.5 fl oz of fresh water, and bring the rice to a boil over medium heat. Turn off the heat, cover the pot with a lid, and let the rice simmer for 15 minutes. Transfer the cooked rice to a bowl. Mix the rice vinegar, sugar, and salt together, pour it over the rice, and gently stir it all together.
  • Line a Bundt pan with plastic wrap, evenly distribute two-thirds of the rice around the mold, and firmly press it against both edges, making sure to leave space in the middle.
  • Slice the carrots into long, fine strips, and distribute them evenly between the rice walls. Rip the surimi sticks into long, thin pieces and mix them together with the chili sauce, sesame oil, ginger, lemon zest, and lemon juice. Now spread this mixture over the carrots.
  • Add the Japanese seaweed salad to the mold before spreading the remaining rice on top and pressing it down with damp fingertips.
  • Cover the top of the pan with a large plate or cutting board and flip it over. Gently remove the pan and the plastic wrap.
  • Garnish the cake in sections with cucumber, tuna, avocado, white fish, and salmon. Top it all off with sesame seeds and spring onions and the gigantic sushi donut is ready.
