Course Snacks

Ingredients

  • baguettes
  • tbsp cream cheese
  • arugula
  • ham slices
  • Swiss cheese slices
  • cucumber slices
  • bell pepper strips
  • 1 sheet puff pastry sheet
  • shredded mozzarella cheese
  • chopped spinach
  • 16 oz cream cheese
  • 3 bunches parsley, chopped
  • 3 bunches chives, chopped
  • mini bread rolls
  • red & yellow cocktail tomatoes
  • 6 bread sticks
  • puff pastry ham bites
  • pigs in a blanket
  • pizza slices
  • pretzels
  • tortilla chips

Instructions

  • Cut the baguettes in half lengthwise and then cut each baguette into 3 equal pieces. Spread a generous amount of cream cheese on the bottom sections of bread, top with arugula, ham, Swiss cheese, cucumbers, and bell pepper strips, and place the top sections of bread back on top.
  • Spread cream cheese over the puff pastry sheet and top with a spinach & shredded mozzarella cheese mixture. Starting from one of the longer edges, roll up the dough and cut the roll into about 16 pieces. Transfer the puff pastry swirls to a baking tray lined with parchment paper and cook in a preheated oven at 350°F for 25 minutes.
  • Spread cream cheese over a clean serving platter and top with the mixed herbs so that the cream cheese is completely covered. Fill a piping bag with cream cheese and use it to create the white lines of a soccer field. Top the mini bread rolls with toothpicks and cocktail tomatoes to create the soccer players and use the breadsticks to create the soccer goals.
  • Fill cardboard boxes with the snacks, arrange them around the soccer field, and place the sandwiches around the filled cardboard boxes.
