Scalloped Potato Loaf
Think loaf pans are only for bread and cake? Think again! We made a scalloped potato casserole loaf that not only looks great, but also tastes amazing thanks to seasoned ground beef, fresh spinach, ripe tomatoes, and plenty of cheese!

Ingredients
- 5 large potatoes
- 9 slices cheese
- fresh chopped parsley to garnish
- 2 tbsp olive oil
- 1 onion diced
- 1 clove garlic minced
- 1 lb ground beef
- 2 tsp paprika
- 14 oz diced tomatoes
- salt & pepper to taste
- 6 cups fresh spinach
Instructions
- Peel the potatoes, cut them into thin slices, and line the bottom and sides of a greased 12 x 4-inch loaf pan with them.
- Cut 3 of the cheese slices in half lengthwise. Place 2 of the full cheese slices on top of the potatoes on the bottom of the pan and line the sides of the pan with 6 halved slices.
- Heat the olive oil in a pan over medium heat and sweat the onion and garlic. Add the ground beef and season with paprika. Add the diced tomatoes, season with salt and pepper, stir in the spinach leaves, and let the mixture cook for about 10 minutes.
- Spoon ⅓ of the ground beef filling over the full cheese slices in the loaf pan. Cover the ground beef filling with potato slices, followed by 2 full slices of cheese. Spread another layer of the ground beef filling over the cheese slices and push more potato slices down on the sides of the loaf pan. Top with another layer of potato slices, 2 full cheese slices, and a layer of the ground beef filling. Cover the ground beef filling with potato slices as the final layer.
- Transfer the loaf pan to a preheated oven and cook at 375°F for about 1 hour. Garnish the scalloped potato loaf with fresh chopped parsley before serving.
