Savory Rice and Zucchini Cake

Ingredients
- 21 oz cooked rice
- 4 eggs, beaten
- 3.5 oz parmesan, grated
- nutmeg
- 1 onion, finely chopped
- 4 zucchini
- salt and pepper
- 0.5 cup cream cheese
- 7 oz mozzarella
Instructions
- Chop the zucchini into bite-sized pieces. Optionally, set aside some pieces for decoration. Fry the finely chopped onion in a pan with some oil over medium heat. Add the zucchini and fry until done. Season with salt and pepper.
- Combine the cooked and cooled rice with the beaten eggs. Mix in the grated parmesan and a pinch of nutmeg. Place about three-quarters of the mixture in a greased, round springform pan, creating a hollow in the middle for the filling.
- Mix the fried zucchini and onions with the cream cheese and mozzarella pieces. Fill the hollow in the rice cake with this mixture, leaving some space at the top. Cover with the remaining rice mixture.
- Bake the cake in a preheated oven at 360°F for 45 minutes.
