Rainbow Cheesecake Recipe Makes 2 Whole Cakes!

The following recipe is tailor-made for anyone out there wondering what you can find at the end of a rainbow. While there won’t be any pots of gold, you’re sure to be in for quite a magical treat!

Rainbow Cheesecake

A colorful and delightful cheesecake recipe that makes two whole cakes!

  • Springform cake pan
  • Freezer bag
  • Rolling Pin

Ingredients
  

  • 5 oz butter cookies
  • 3 oz sugar sprinkles
  • 4 oz melted butter
  • 24 oz cream cheese
  • 15 fl oz sweetened condensed milk
  • 4 tbsp sugar
  • 1 tbsp vanilla extract
  • 12 fl oz warm cream
  • 10 softened gelatin sheets
  • food coloring in purple, blue, green, yellow, red
  • some melted white chocolate
  • marshmallows

Instructions
 

  • Fill a freezer bag with the butter cookies and crush them using a glass or rolling pin. Mix the crushed butter cookies with sugar sprinkles and melted butter. Add the mixture to a springform cake pan and press it down using the back of a spoon. Refrigerate the pan for 30 minutes before continuing.
  • Stir cream cheese, condensed milk, sugar, and vanilla flavoring into a creamy mixture. Add the softened gelatin sheet to the warm cream and dissolve them while stirring. Stir the cream into the rest of the mixture.
  • Split the cheesecake mixture into five portions of different sizes. Start with the smallest portion — this will be the center of the rainbow later — and finish with the largest. Color the portions of mixture purple, blue, green, yellow, and red.
  • Pour the red mixture into the springform cake pan. Next, pour the yellow mixture into the red one while it's still liquid. Do so slowly and make sure it's poured into the center of the pan. Do the same with the green, blue, and purple mixtures. Now place the cheesecake in the fridge for around three hours.
  • Once the cheesecake mixture has cooled and hardened, remove it from the pan and cut it in half. Cut a small semi-circle from the center of both halves. Next, dip marshmallows into the melted chocolate and place them at each end of the rainbow. Use marshmallows of differing sizes to make the 'clouds' more realistic. Repeat these steps with the second half of the cake.
