  • 4 eggs for each cake
  • 2 cups sugar for each cake
  • 1.75 cups ground walnuts for each cake
  • 2.5 cups flour for each cake
  • 1 tsp cinnamon for each cake
  • 1 tbsp baking powder for each cake
  • 1 pinch salt for each cake
  • 1.75 sticks butter room temperature, for each cake
  • 1 small Hokkaido pumpkin grated, for each cake
  • 0.5 can pumpkin puree for the frosting
  • 8 oz cream cheese for the frosting
  • 0.25 cup powdered sugar for the frosting
  • 1 tbsp pumpkin pie spice for the frosting
  • 1.33 cups whipped cream for the frosting
  • 2 cups powdered sugar for the icing
  • 4 tbsp lemon juice for the icing
  • 1 drop orange food coloring for the icing
  • green fondant for decoration
  • butter & bread crumbs to coat the pan

Instructions

  • Beat the eggs and sugar until frothy, stir in the ground walnuts, flour, cinnamon, baking powder, salt, and softened butter, and then fold in the grated pumpkin. Grease 2 bundt pans with butter and sprinkle bread crumbs inside before adding the batter. Bake the pumpkin bundt pans in a preheated oven set to 350°F for 55 minutes.
  • Let the pumpkin cakes cool for about 10 minutes before removing them from the pans. In the meantime, prepare the pumpkin spice cream cheese frosting. Mix the pumpkin purée, cream cheese, powdered sugar, and pumpkin pie spice, and then gently fold in the whipped cream at the end.
  • Remove the cakes from the pans and place the first of the pumpkin bundt cakes on a platter with the bottom facing up. Fill the hole in the bundt cake with the pumpkin spice cream cheese frosting and spread it over the top. Place the second bundt cake on top and fill the hole in the cake with pumpkin spice cream cheese frosting.
  • Mix the ingredients for the icing and pour it over the top of the cake. Form the green fondant into a stem and put it on top of your pumpkin cake.
