Equipment
- Baking tray
- Parchment paper
- Potato Masher
Ingredients
- 3 lbs boiled potatoes
- 35 slices pepperoni
- 7 oz flour
- 7 oz shredded mozzarella
- 2 eggs
- 1 tsp basil
- 1 tsp oregano
- 2 tsp salt
- 1 tsp pepper
Instructions
- Lay out the pepperoni slices on some parchment paper in a rectangular shape (5 rows of 7 slices).
- Mix the boiled potatoes with the seasoning, eggs, and flour. Press down on the potatoes with a fork or a potato masher until you have a nice even mixture.
- Carefully spoon the mashed potato onto the pepperoni slices and sprinkle mozzarella on top.
- Carefully roll up your pepperoni & potato rectangle with the help of the baking parchment. Place the Potato Pizza Roll onto a baking tray and bake in a convection oven set to 360°F for 20 minutes.
