Fried Potato Nest with Colorful Hard-Boiled Eggs

While most Easter recipes out there are all about sweets and desserts, this recipe for a fried potato nest with colorful hard-boiled eggs is the perfect centerpiece for your Easter brunch! Easy to make and absolutely stunning, this meal is fit for the Easter Bunny himself!

  • Bundt Pan
  • Large Pot

Ingredients
  

  • 6 hard-boiled eggs for the colorful hard-boiled eggs
  • 1.5 cups basil pesto for the colorful hard-boiled eggs
  • 1.5 cups sun-dried tomato pesto for the colorful hard-boiled eggs
  • 2 lbs waxy potatoes grated, for the fried potato nest
  • 3 tbsp potato starch for the fried potato nest
  • 48 fl oz vegetable oil for frying, for the fried potato nest
  • salad greens for the decoration
  • salad dressing for the decoration
  • edible flowers for the decoration

Instructions
 

  • Gently roll the hard-boiled eggs until the shells begin to crack but remain intact. Submerge 3 of the eggs in the basil pesto and 3 of the eggs in the sun-dried tomato pesto and refrigerate for at least 6 hours, or preferably overnight.
  • Combine the grated potatoes and potato starch and spoon the mixture into a bundt pan. Bring the vegetable oil to a boil in a large pot, carefully pour it over the potatoes in the bundt pan, and let the potatoes fry for about 5 minutes.
  • Arrange the salad greens in a ring on a serving platter. Carefully lift the fried potato nest out of the bundt pan, let the cooking oil drain off, and place it on top of the salad greens. Take the hard-boiled eggs out of the pesto, rinse them off, remove the egg shells, and place them in the center of the fried potato nest. Garnish with salad dressing and edible flowers before serving.
