Herb-Roasted Pork Loin Accordion with Pasta in White Wine Sauce

- 8 oz pork loin
- 1 bunch parsley
- 1 bunch chives
- 2 garlic cloves
- salt & pepper to taste
- 3 tbsp olive oil
- flour for the breading
- 1/3 cup white wine
- 2/3 cup heavy cream
- salt & pepper to taste
- 6 oz cooked pasta
Instructions
- Place the pork loin between 2 wooden sticks and make several evenly-spaced vertical incisions, making sure not to cut all the way through. Turn the pork loin over and make several evenly-spaced incisions at a slight diagonal, making sure not to cut all the way through. Gently spread the meat out like an accordion.
- Chop the parsley, chives, and garlic, season with salt and pepper, and mix with the olive oil. Then press the herb mixture into the cuts in the pork loin.
- Heat some cooking oil in a pan over medium heat. Dredge the pork loin in flour, lightly shake off any excess flour, and then fry it in the pan on both sides for about 10 minutes until crispy. Remove the herb-roasted pork loin accordion from the pan and let the meat rest in a warm place.
- Pour the white wine and heavy cream over the drippings in the pan and let everything boil down briefly. Season the sauce with salt and pepper, add the cooked pasta to the pan, and toss the noodles to coat them in the sauce. Serve the herb-roasted pork loin accordion with the creamy white wine pasta.
