Cheesy Phyllo Taco Ring

Ingredients
- 1 tbsp vegetable oil
- 3 chicken breasts, diced
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 onion, diced
- 1 potato, diced
- 1/3 cup tomato sauce
- 1 tsp chopped mint
- 1 tsp paprika
- salt & pepper to taste
- 14 oz phyllo dough
- 2/3 cup flour
- 3 eggs
- 3/4 cup milk
- 3 tbsp chopped parsley
- 2 tsp salt
- 1 tbsp baking soda
- 1 1/2 cups shredded mozzarella cheese
Instructions
- Heat some vegetable oil in a pan over medium heat and cook the diced chicken. Add the diced bell peppers, onion, and potato to the pan and briefly cook everything. Stir in the tomato sauce and mint, season with paprika, salt, and pepper, and let simmer for 10 minutes.
- Place several layers of phyllo dough on top of each other and cut out several circles with a diameter of 5-6 inches. Place two dough circles on top of each other in your hand and fill with 1-2 tablespoons of chicken mixture. Repeat with the remaining phyllo dough and chicken mixture and then arrange the phyllo tacos in a circle in an oven-proof frying pan.
- Combine the flour, eggs, milk, parsley, salt, and baking soda and spoon the mixture over the phyllo tacos in the pan. Sprinkle the shredded mozzarella cheese on top, transfer the pan to a preheated oven, and cook at 350°F for 20 minutes.
- Serve the cheesy phyllo taco ring with your favorite yogurt dipping sauce.
