Parmesan Cheese Bowl Filled With Pasta & Roasted Vegetables

Cooking can be quite the hassle, but there’s a golden rule we swear by. When in doubt, grate some cheese over pasta and put it in the oven. Whether it’s spaghetti, baked ziti, or lasagna, cheese just has that innate ability to turn a dull dish into a glorious, cheesy delight. But we figured we could up the ante and create something even more delicious, so we put the pasta on the cheese instead of putting the cheese on the pasta. Sounds insane, right? All you need to turn this dream into a reality is some parmesan, spaghetti noodles, roasted veggies, and the chutzpah to explore a new dimension of cheesy crispiness.

Parmesan Cheese Bowl Filled With Pasta & Roasted Vegetables

  • Parchment paper

Ingredients
  

  • 3 oz finely shredded parmesan
  • 7 oz cooked spaghetti noodles
  • 1 zucchini
  • 1 eggplant
  • 1 yellow pepper
  • 1 orange pepper
  • 10 cherry tomatoes
  • salt & black pepper to taste
  • shredded parmesan to garnish
  • fresh basil to garnish

Instructions
 

  • Sprinkle the parmesan on a piece of parchment paper and shape into a circle. Put in the oven for about 7 minutes and bake at 375°F. Take your cheese circle out of the oven and let it cool down a bit, but don't forget to put it over an upside-down bowl while it's still warm and pliable. Push the parmesan so it mimics the shape of the bowl and let it cool down completely.
  • In the meantime, bring salted water to a boil and cook the spaghetti noodles. Chop the veggies into small cubes, saute in some olive oil, and season with salt and pepper. Once the pasta's done, add it to the pan with the veggies and combine everything.
  • Gently pull the hardened parmesan off the bowl, place it upright on a plate, and fill the cheese bowl with the pasta and veggies. Garnish with shredded parmesan and fresh basil and enjoy!
