Oven-Baked Chicken Sandwiches

This recipe leans a little healthier than the sandwiches from fast food chains because it calls for chicken breast, but that doesn't mean that this 'wich is any less flavorful. These ones are baked in the oven, sprinkled with cheddar cheese, and topped with bacon – yummy!

Ingredients
- 6 eggs
- 1/3 cup heavy cream
- salt & pepper to taste
- 8 bread rolls
- 1/4 cup mayonnaise
- 16 dill pickle sandwich slices
- 3 chicken breasts
- 2 cups shredded cheddar cheese
- 16 slices bacon
- 4 tomatoes, sliced
- 1/4 cup ketchup
Instructions
- Whisk the eggs with the heavy cream and season with salt and pepper. Slice open the bread rolls and dip them in the egg mixture.
- Place the bottom rolls in a casserole dish, spread mayonnaise over them, and top each roll with 2 dill pickle sandwich slices.
- Heat a lightly greased skillet over medium heat and sear the chicken breasts on both sides until golden brown. Reduce the heat to low and cook the chicken breasts all the way through. Let the chicken breasts cool down and cut them diagonally into several medium-thin pieces. Put 2-3 pieces of chicken breast on each roll.
- Sprinkle shredded cheddar cheese over the chicken slices.
- Fry the bacon in a pan and place 2 slices on each roll.
- Top each roll with 2 tomato slices and drizzle ketchup on top.
- Put the top rolls back on the sandwiches and pour the rest of the egg mixture on top. Transfer the casserole dish to a preheated oven and cook at 325°F for 25 minutes.
