Ingredients
  

  • 0.5 cup orange juice for the orange slice bowl
  • 0.5 cup water for the orange slice bowl
  • 1.25 cups sugar for the orange slice bowl
  • 2 oranges sliced, for the orange slice bowl
  • 0.5 cup orange juice for the orange mousse
  • 0.25 cup sugar for the orange mousse
  • 2 gelatin sheets soaked, for the orange mousse
  • 1 cup whipped cream for the orange mousse
  • orange zest for the orange mousse
  • leftover orange glaze to garnish
  • fresh mint to garnish

Instructions
 

  • Add the orange juice, water, and sugar to a saucepan over medium heat and bring everything to a boil. Cut the oranges into very thin slices and briefly blanch the orange slices in the liquid. Remove the orange slices from the liquid and let them drain. Set the liquid aside for now as you'll need it later for the orange glaze.
  • Line a 6-inch bowl with parchment paper and arrange the orange slices around the inside of the bowl in an overlapping pattern. Place a 5-inch bowl inside the bowl with the orange slices to weigh them down. Transfer the bowl to a preheated oven, place a wooden spoon in the door to keep it slightly open, and cook at 225°F for 2 hours. After 2 hours, remove the smaller bowl, blot any excess liquid from the orange slices, and let cook for another 3-4 hours until the fruit is dehydrated.
  • Bring the orange juice, sugar, and soaked gelatin to a boil in a saucepan over medium heat. Remove the pan from the heat and let the mixture cool to room temperature before folding in the whipped cream and orange zest.
  • Spoon the orange mousse into the orange slice bowl and garnish with some of the orange glaze you set aside earlier and fresh mint.
