Most types of fruit are long out of season by this time of year. However, citrus fruits usually remain in high demand. As well as being nice stocking fillers, citrus fruits make a great topping for a deliciously zesty tarte tatin. If you’re suffering from the winter blues, this tasty treat is sure to brighten your mood and direct your thoughts toward the summer!
Orange & Grapefruit Tarte Tatin
A dessert recipe that brings summer freshness.

- Springform cake pan
- Baking parchment
Ingredients
- 1 grapefruit
- 1 orange
- 4.2 oz butter
- 5.2 oz white sugar
- 5.2 oz brown sugar
- 2 eggs
- 3 tbsp orange juice
- 6.3 oz flour
- 1 tsp baking powder
- 0.25 tsp baking soda
- 0.5 tsp salt
- 5.2 oz yogurt
- 4.2 oz sugar (for fruits)
- 2 fl oz water
Instructions
- Start by cutting the fruit into ½ inch thick slices. Remove the peel from the pieces of fruit by cutting away the white part of the peel.
- Beat the butter with the two types of sugar. Add the eggs and orange juice while continuing to stir the mixture. Next, mix in the baking powder, baking soda, and salt. Add the dry ingredients and the yogurt to the butter mix and work everything into a dough.
- Heat up the sugar and water until the sugar has completely dissolved. Pour half of the sugar mixture into a springform cake pan that's covered with baking parchment. Then place the slices of fruit on top in a symmetrical pattern. Use smaller pieces of fruit to fill in the gaps and edges. Now pour the rest of the sugar water onto the fruit.
- Spoon the dough on top and spread it out flat. Bake the tart at 350°F for 35 minutes in a convection oven. Be sure to refrigerate the tart before removing it from the springform pan.
