Most of the time, one pot dishes are all about pasta, but they’re also fantastic with potatoes or even dumplings. The latter is what we’re focusing on with this recipe. Equipment

  • tagine (10 inch diameter) or casserole dish or pan with lid

Ingredients
  

  • 1 ⅔ cups flour
  • ½ tsp salt
  • 1 egg
  • ¼ cup water
  • 14 oz ground beef
  • salt & pepper to taste
  • 1 onion, diced
  • ¼ cup raisins
  • 1 tbsp chili paste (harissa)
  • 1 tbsp chopped cilantro
  • 3 tbsp olive oil
  • 1 onion, diced
  • 2 garlic cloves, chopped
  • 1 tbsp tomato paste
  • 1 tbsp spice mix (Ras el-Hanout)
  • cup vegetable broth
  • 2 potatoes, sliced
  • 8 oz tomato puree
  • salt & pepper to taste
  • 1 oz sliced almonds, roasted
  • chopped cilantro

Instructions
 

  • Knead all the ingredients for the dough together, wrap the dough in plastic wrap, and refrigerate it for 1 hour.

  • In the meantime, prepare the beef filling by mixing all the ingredients together.

  • Roll out the dough very thinly on a floured surface and cut it into thin squares as shown in the video.
    Dough Rolling
  • Add one tablespoon of the beef filling per dough square and then fold it in. Slightly moisten the edges of the dough so that it sticks together better.
    Filling Dumplings
  • Sweat the onions and garlic in oil, add the tomato paste and Ras el-Hanout, and let everything cook briefly before adding the vegetable stock. Spread the potato slices in the skillet and add the tomato puree and the dumplings. Let everything simmer over medium heat for 15-20 minutes. Season with salt and pepper to taste. Garnish the dish with roasted, sliced almonds and cilantro before serving.
