Our Tasty Apple Pie Has High Expectations

If you think we don’t need any more takes on apple pie, you’ll soon change your mind after seeing this eye-catching masterpiece. Compact and stacked high, this special pie is bursting at the seams with deliciousness.

Mile High Apple Pie

Ingredients
  

  • 4.5 lbs apples
  • 13.5 oz sugar
  • 2 oz flour
  • 1 tbsp cinnamon
  • 1 pinch salt
  • 15.5 oz flour for pastry dough
  • 2.5 oz sugar for pastry dough
  • 12 oz cold butter cut into small cubes
  • 5.5 fl oz cold water
  • 1 whisked egg
  • some sugar

Instructions
 

  • Peel and remove the cores from the apples before cutting them into thin wedges.
  • Mix the apple wedges in a large bowl with sugar, flour, cinnamon, and a pinch of salt.
  • Knead the ingredients for the pastry using your hands or an electric whisk. Make a large ball out of the pastry dough and cut away about a third of it. Place the other two thirds to the side. Next, roll the dough out into a round shape on a worktop covered in flour. Now place the dough in a round casserole dish that has tall sides and carefully press it onto the bottom of the dish and around the sides. The dough should be hanging over the edges slightly.
  • Starting from the outside, stack the apple wedges inside the dough toward the center in layers. Once you've reached the edge of the dish, the layers should become narrower at each step — just like a pyramid.
  • Now roll out the remaining two thirds of dough on a worktop covered in flour. Once it's the right thickness, carefully place this layer of pastry dough on top of your 'pyramid.' Press the dough onto the apples and the lower section of dough. Any overhanging dough can be cut away using a knife. Next, press down on the dough along the edge at regular intervals using your thumb. This helps keep the two sections of dough together and creates an attractive design.
  • Spread egg onto the dough and sprinkle some sugar on top. Also cut small slits into the top of the pie. Bake your Mile High Apple Pie at 320°F for 60 minutes in a convection oven.

Notes

It's quite a challenge cutting away neat and tidy slices from this monster dessert, but that famous apple pie taste will more than make up for the mess. The pie is best served warm with a scoop of vanilla ice cream or a generous helping of vanilla sauce. Yummy!
