If you’ve just been using your waffle iron to make waffles, then you’ve been missing out! We’ve recently discovered just how delicious mashed potato and sweet potato waffles are, and we have to share our discovery with the world. This mashed potato waffle stack starts out with our inventive new waffles, which get stacked up between delicious layers of tangy pulled pork, melted mozzarella cheese, creamy guacamole, and smooth sour cream. You’ve definitely never eaten waffles like this before, and we’re not sure why you would go back to eating regular old waffles ever again!

Ingredients
  

  • 2 lb pork loin
  • 2 tbsp paprika
  • 2 tsp salt
  • 2 tsp pepper
  • 1/3 cup white vinegar
  • 2/3 cup tomato sauce
  • 2 lb potatoes
  • 1/4 cup corn starch
  • 2 tsp salt
  • 1 tbsp butter
  • 2 lb sweet potatoes
  • pulled pork
  • mashed potato waffles
  • mashed sweet potato waffles
  • shredded mozzarella cheese
  • guacamole
  • sour cream

Instructions
 

  • Let the pork loin, paprika, tomato sauce, vinegar, salt, and pepper marinate in a casserole dish. Place the pork loin in a skillet over medium heat and briefly sear the meat on all sides. Reduce the heat to low, cover the skillet with a lid, and let cook for 2 hours 30 minutes, making sure to rotate the pork loin every so often. Let the cooked pork loin rest for 10 minutes and then shred the meat.
  • Peel the potatoes and boil them in slightly salted water. Mash the boiled potatoes and combine with the corn starch, salt, and butter until smooth. Spoon some of the mashed potatoes into a rectangle grid waffle maker and cook until done. Continue making mashed potato waffles until you have 6 rectangles.
  • Repeat the process with the sweet potatoes for the mashed sweet potato waffles, also making 6 rectangles.
  • Assemble the mashed potato waffle stack in the following order: 2 mashed potato waffle rectangles, pulled pork, shredded mozzarella, 2 mashed sweet potato waffle rectangles, guacamole, sour cream. When you reach the last layer of mashed sweet potato waffles, top with a final layer of shredded mozzarella.
