When you think of dessert, nothing screams decadence like a rich, moist chocolate cake. Using that as our base, we decided to add some more of the most delicious, sweet ingredients out there that make dessert such a treat. This magic shell chocolate cake is absolutely stuffed with a creamy cheesecake mousse, fresh strawberries, and best of all, it gets covered in a dark & white chocolate shell. It has all of the fixings for the perfect dessert, plus it’s quick & easy to make. If you think it looks great from the outside, just wait until you see what’s hiding under its magic shell. It’s a dessert lover’s dream come true!
Magic Shell Chocolate Cake with Fresh Strawberries and Cheesecake Mousse
Equipment
- Springform pan
- new disposable razor
Ingredients
- 3 eggs
- 1 cup flour
- 0.5 cup sugar
- 1 tsp baking powder
- 2 tbsp cocoa powder
- 1 pinch salt
- halved strawberries for the filling
- 1 cup cream cheese
- 0.67 cup powdered sugar
- 2 tsp vanilla sugar or 1 tsp vanilla extract
- 1 cup heavy cream, whipped
- 1 pinch salt
- 1 tbsp unflavored gelatin powder
- 7 oz white chocolate, melted
- 7 oz dark chocolate, melted
- 1.75 sticks butter
- white & dark chocolate shavings
- chocolate bar (e.g. Kinder bar)
Instructions
- Preheat the oven to 350°F and grease a springform pan. Separate the eggs and whip the egg whites together with a pinch of salt, then beat the egg yolks together with the sugar until frothy. Sift the flour through a fine sieve straight into the egg yolk mixture and stir it in gently so that the batter becomes light and airy. Carefully fold in the beaten egg whites, then pour the batter into the greased springform pan. Transfer the springform pan to the oven and bake the chocolate cake at 350°F for 15 minutes. Once it's done baking, remove the cake from the oven and let it cool completely.
- Beat together the cream cheese, vanilla sugar or vanilla extract, powdered sugar, and unflavored gelatin powder. Whip the heavy cream together with a pinch of salt and carefully fold it into the cream cheese mixture.
- Cut the strawberries in half and place them on top of the layer of chocolate cake.
- Cover the layer of strawberries with the cheesecake mousse, then transfer the springform pan to the refrigerator and chill for 1 hour.
- Heat a large pot filled with water on the stove, then break the white and dark chocolate into small pieces and place them in separate pitchers. Suspend the pitchers on the side of the pot filled with simmering water and melt the chocolate. Split the butter in 2 and place ½ in each of the 2 pitchers.
- Take the cake out of the refrigerator and remove the ring from the springform pan. Pour the 2 types of melted chocolate over the top of the cake, making a decorative design. Once the chocolate shell has dried, use a new disposable razor to shave small pieces of dark and white chocolate onto the top of the cake. Place a few pieces of your favorite chocolate bar on top of the cake as the finishing touch.
