Ingredients

  • 8.5 fl oz warm milk
  • 2 tbsp flour
  • 1 tsp active dry yeast
  • 2 eggs
  • 1 tbsp sugar
  • 17.5 oz flour
  • 3 oz melted butter
  • 1 tsp salt
  • 3.5 oz flour
  • flour for your work surface
  • 5 tbsp ketchup or tomato sauce
  • 14 oz hot dogs
  • 14 oz shredded mozzarella
  • egg yolk

Instructions

  • Stir the milk, first portion of flour, and active dry yeast together with a whisk. Mix the eggs and sugar in a small bowl and stir into the yeast mixture. Let sit for 15 minutes. Then add the second serving of flour, the butter, and the salt and carefully knead all the ingredients with your hands. Leave the dough covered in a warm place for 2 hours. Now add the third portion of flour and knead the dough again.
  • Flour your work surface and roll out a third of the dough in a thin layer. Place a large circular plate on the rolled dough and cut around it.
  • Place the round dough ring on a sheet pan lined with parchment paper. Evenly spread half of the tomato sauce (or ketchup, if you prefer) over the dough. Shred the hot dogs with a cheese grater and sprinkle half of it over the sauce. Then do the same with the mozzarella cheese.
  • Roll out the unused dough, cut out another dough circle of the same size, and lay it on top of the cheese and hot dogs. Repeat the previous steps to create another layer of sauce, hot dogs, and cheese, and top with a third piece of circular dough.
  • Place a small dish upside down in the middle and cut the ring from the inside out into 12 pieces. Twist each slice twice.
  • Coat your twisted bread ring with an egg yolk and bake for 30 minutes at 390°F.
