Ingredients

  • 5 oz roasted hazelnuts (set 20 pieces aside)
  • 1 oz cocoa powder
  • 1 tsp vanilla extract
  • 2.5 oz honey
  • 1 pinch salt
  • 6 oz melted chocolate
  • 5 oz chopped hazelnuts
  • 7 oz roasted hazelnuts
  • 10 fl oz cream
  • 1.75 oz powdered sugar
  • 1 tbsp cocoa powder
  • 7 oz melted milk chocolate
  • 5.75 oz white chocolate
  • 2 tbsp coconut oil
  • 2.75 oz shredded coconut
  • 20 roasted almonds

Instructions

  • Purée the hazelnuts for 2-3 minutes in a blender until finely chopped. Add the cocoa powder, vanilla extract, salt, and honey and purée for another 20 seconds. Roll the dough into balls and fill each ball with a hazelnut. Chill the balls for one hour before dipping them in melted chocolate and then rolling them in chopped hazelnuts. What a chocolatey delight!
  • Roast the hazelnuts at 355°F for 20 minutes, wrap them in a kitchen towel, and knead until the peels comes loose. Put the peeled hazelnuts in a blender and chop until small. Add the cream, powdered sugar, cocoa powder, and milk chocolate and purée everything. Pour the creamy delicacy in a glass and refrigerate. Yum!
  • Melt the white chocolate with the coconut oil and carefully stir in the shredded coconut. Use a small ice cream scoop to create balls with almonds stuffed in the center. Roll the balls in the shredded coconut and your Raffaellos are ready to go!
