Equipment

  • Toothpicks

Ingredients
  

  • 3 chicken breasts
  • salt & pepper to taste
  • 3 large ham slices
  • 3 large cheese slices
  • 15 green asparagus stalks, blanched
  • 2 tbsp ketchup
  • 1 tsp mustard
  • 1 tbsp olive oil
  • 2 tbsp soy sauce
  • 2 tbsp orange juice
  • salt & pepper to taste
  • hollandaise sauce to serve on the side

Instructions
 

  • Butterfly the chicken breasts and flatten them. Season the chicken with salt and pepper and place the ham and cheese slices on top.
  • Blanch the asparagus and place 5 stalks on each chicken breast. Roll the chicken breasts together, fixing them with toothpicks if necessary.
  • Mix together all the ingredients for the marinade and brush it over the chicken rolls.
  • Grill the chicken rolls on both sides until golden brown and crispy, and serve with hollandaise sauce. If your chicken breasts are a bit thicker, you can close the lid of the grill and let them cook over medium heat.
