This grilled skillet brownie is cooked right outside, so instead of staying trapped inside with a hot oven, you can enjoy the great outdoors and still get your delicious dessert fix! These rich, moist brownies are also served with a side strawberries that are glazed and grilled right next to the brownies. Add a scoop of vanilla ice cream on top, and you’ve got the best parts of the summer season all in one dessert!
Grilled Brownies and Strawberries

Ingredients
- 1.5 sticks butter
- 11 oz semi-sweet chocolate, chopped
- 1 cup flour
- 1 tsp baking powder
- 1 tsp salt
- 3 tbsp vegetable oil
- 3 tbsp vanilla extract
- 1.33 cups brown sugar
- 4 eggs
- 0.25 stick melted butter
- 1 tbsp honey
- 1 tsp lemon zest
- 1 pinch salt
- 25 strawberries
- vanilla ice cream
Instructions
- Soak the wooden skewers in water for 1-2 hours so that they don't burn on the grill. Lightly grease a 9-inch cast iron skillet.
- Melt the butter and chopped semi-sweet chocolate on the stove using a double boiler. Stir until combined, then sift the flour, baking powder, and salt into the chocolate mixture. Add the vegetable oil, vanilla extract, brown sugar, and eggs. Stir until combined, then pour the batter into the greased cast iron skillet.
- Transfer the skillet to the grill, cover the grill, and bake the brownies for 45 minutes.
- Mix the melted butter, honey, lemon zest, and salt in a small mixing bowl. Skewer the strawberries on the soaked wooden skewers.
- Brush the honey butter glaze over the skewered strawberries. Transfer the skewered strawberries to the grill and cook them for about 2 minutes on each side.
- Remove the cast iron skillet and grilled strawberries from the grill, slice up the brownies, and serve with vanilla ice cream.
