You’ll Need:
For the fruitcake:
- 4 cups + 2 tbsp all-purpose flour
- ⅓ cup milk
- 1½ oz fresh yeast
- 2¼ sticks sweet cream butter, room temperature
- ⅓ cup superfine sugar
- 1 tbsp vanilla sugar
- 1 tsp salt
- zest from 1 lemon
- 2 cups raisins
- ⅓ cup rum
- ½ cup chopped almonds
- ¼ cup candied lemon peel
- 2 tbsp candied orange peel
To garnish:
- ½ stick sweet cream butter, melted
- 2 tbsp sugar
- 1⅔ cups powdered sugar
- 1 tsp corn starch
