Galaxy Cake With A Mirror Glaze

Trust us when we say that this dessert is out of this world!

Ingredients
- 4 eggs
- 1.25 cups powdered sugar
- 1.5 sticks butter, melted
- 1 cup semi-sweet chocolate chips, melted
- 1.25 cups flour
- 1 tsp baking powder
- 0.5 tsp salt
- 1.5 cups semi-sweet chocolate chips
- 3 cups heavy cream, divided
- 0.67 cup powdered sugar
- 1.25 cups water
- 1.67 cups sugar
- 1.33 cups sweetened condensed milk
- 8 gelatin sheets, soaked
- 4.5 cups white chocolate chips
- red, blue, turquoise, purple & pink food coloring
- silver star sprinkles to garnish
- blue & purple sanding sugar to garnish
Instructions
- Beat the eggs and powdered sugar with a hand mixer until frothy. Add the melted butter and melted chocolate and mix until combined. Stir in the flour, baking powder, and salt. Pour the cake batter into a greased 9 x 9-inch square cake pan, transfer the pan to a preheated oven, and cook at 350°F for 40 minutes. Once the cake has cooled, place an 8-inch bowl on top of the cake and trace around it. This circular section will be used as the cake base later on.
- Add the semi-sweet chocolate chips to the 8-inch bowl you used in Step 1. Heat 1 cup of heavy cream, pour it over the chocolate chips, and mix until smooth. Let the chocolate cream cool to room temperature. Whip the remaining 2 cups of heavy cream with the powdered sugar and gently fold the whipped cream into the chocolate cream mixture. Smooth out the top of the chocolate mousse and place the cake base from Step 1 on top. Transfer the bowl to the freezer for 24 hours.
- The next day, place a small casserole dish with a flat bottom upside-down in the center of a baking tray. Remove the frozen chocolate mousse cake from the bowl and place it upright on the overturned dish so that the dome is facing up.
- Whisk the water, sugar, and sweetened condensed milk in a pot over medium heat. Bring the mixture to a boil and then reduce the heat to low. Squeeze the liquid out of the soaked gelatin sheets and add them to the pot together with the white chocolate chips. Once the chocolate has melted, puree the mixture with an immersion blender until smooth.
- Divide the galaxy mirror glaze between 3 medium bowls and 3 small bowls and use food coloring to make 5 of the bowls a different color. We opted for midnight blue, sky blue, turquoise, purple, and pink, but feel free to use the galaxy colors of your choice, making sure to leave 1 of the small bowls of glaze uncolored. Pour the 3 medium bowls of glaze into a large bowl and then pour the 3 small bowls of glaze on top. Drag a spoon through the glaze on top to slightly mix the colors.Pour the galaxy mirror glaze over the chocolate mousse cake until it's completely coated, letting the excess glaze drip down onto the baking tray. Decorate the cake with silver star sprinkles and blue and purple sanding sugar.
