Fruit Windmills
Ingredients
- 3 oz cream cheese
- 2 tbsp sugar
- 1 tsp vanilla extract
- organic lemon zest
- 1 package puff pastry
- red jam of your choice (e.g., raspberry)
- 16 raspberries
- 1 egg, whisked
Instructions
- Mix the cream cheese, vanilla extract, and lemon zest together into a smooth cream.
- Roll out the puff pastry and cut it into four squares. Spoon one tablespoon of both the cream mix and the red jam into the middle of every square.
- To create the windmill effect, cut the square four times, from each corner in towards the center. Then place four raspberries evenly around the dollop of cream+jam, between the cuts. And finally, fold every other corner in to the middle, leaving four still pointing out.
- Coat the windmills with the whisked egg and put them in a pre-heated oven at 350°F for 15 minutes.

Since just four windmills might not be enough, feel free to double the portions, triple, or more. You can experiment with other berries (blueberries, strawberries, etc) and jams as well for multi-colored windmills, depending on your taste!
