Equipment

  • Large frying pan
  • Second pan

Ingredients

  • 6 eggs
  • 1 pinch salt
  • 6 fl oz vegetable oil
  • 8 oz ground beef
  • 1 red bell pepper, chopped
  • 1 tsp garlic, minced
  • 1 tbsp ginger, minced
  • 3 tbsp chili sauce
  • 2 tsp soy sauce
  • 6 fl oz broth
  • 1 tbsp starch (mixed with 2 tbsp cold water)
  • 2 tsp vinegar (optional)
  • 2 tsp sugar (optional)
  • 2 spring onions, finely sliced

Instructions

  • Whisk 6 eggs and season with salt.
Pour the vegetable oil into a large frying pan or skillet and heat to 350°F.
Grasp the pan handle with a heat-resistant towel or dishcloth, collect a ladleful of the hot oil, and keep it handy for Step #5.
  • Quickly pour the eggs into the pan and evenly distribute the liquid.
Once the omelet has risen, pour the ladle of oil on top - this will cause the eggs to poof up even more.
Drain the excess oil from the pan and carefully flip the omelet.
  • Heat the oil for the sauce in a second pan over medium heat and brown the ground beef.
Add the bell peppers, ginger, and garlic to the pan, and then the soy sauce and chili sauce.
Pour in the broth and let simmer for about 20 minutes.
Finally, mix the starch with the water in a separate bowl and then pour the mixture into the sauce.
  • Pour the sauce over the warm omelet and garnish with sliced spring onions.
