This version of ravioli is made out of a ground beef mixture instead of pasta dough, stuffed with cheese, and then fried until nice and crispy!
Fried Meatioli: Breaded Beef Ravioli Stuffed With Cheese

And though pasta is a tried and true classic, we figured it was time to change things up a bit. This version of ravioli is made out of a ground beef mixture instead of pasta dough, stuffed with cheese, and then fried until nice and crispy!
Equipment

- Parchment paper
- Pizza Cutter
Ingredients
- 2 lbs ground beef
- 1 2/3 cups bread crumbs
- 1/4 cup rosemary
- 1 garlic clove, minced
- salt & pepper to taste
- 2 eggs
- 2/3 cup ricotta cheese
- 1 tomato, diced
- 1 tbsp chopped chives
- 2 oz fresh mozzarella cheese, diced
- 1/4 cup shredded Swiss cheese
- 1/2 cup grated parmesan cheese
- 1 egg yolk
- salt & pepper to taste
- 1 whisked egg white for the egg wash
- flour + whisked eggs + bread crumbs for the breading
- marinara sauce, grated parmesan cheese & fresh herbs to garnish
Instructions
- Combine the ingredients for the ground beef mixture.
- Halve the mixture and roll out each half in between 2 pieces of parchment paper.
- Remove the top piece of parchment paper from 1 of the ground beef sections.
- Combine the ingredients for the cheese filling and spoon 4 equal parts of the mixture onto the ground beef section.
- Brush the egg wash over the edges of the ground beef section. Place the second ground beef section on top and carefully press the meat down around the cheese filling.
- Use a pizza cutter to cut out 4 equal pieces and press a wooden spoon handle into the meat along the edges to create ravioli ridges. Freeze the 4 meatioli pieces for 30 minutes.
- Coat the 4 frozen meatioli pieces in flour, egg, and bread crumbs. Heat some cooking oil in a pot to 350°F and fry each piece in hot oil for 6-7 minutes. Serve the meatioli pieces with marinara sauce, parmesan cheese, and fresh herbs.
