Mashed potatoes and meatloaf was a standard dinner for most growing up, and while it was definitely tasty, it could get a little boring after awhile. If you want to amp up the flavor on a blast from the past, or maybe even offer your own kids a taste of your childhood, it’s time to stuff that meatloaf with cheese, roll it up in a ball, coat it with mashed potatoes, and fry it up nice!
Fried Mashed Potato Meatballs

If you want to amp up the flavor on a blast from the past, or maybe even offer your own kids a taste of your childhood, it's time to stuff that meatloaf with cheese, roll it up in a ball, coat it with mashed potatoes, and fry it up nice!
Equipment
- Frying Pan
Ingredients
- 1 shallot, diced
- 1/2 cup fresh parsley, chopped
- 1 lb ground beef
- 1 egg
- 1 cup grated parmesan
- salt & pepper to taste
- 1 slice of white bread
- 5 oz mozzarella or Swiss cheese, cubed
- 2 lbs potatoes
- salt to taste
- 4 slices bacon
- flour
- eggs
- panko bread crumbs
Instructions
- Tear the slice of white bread into small pieces and add it to the ground beef, shallot, parsley, egg, and parmesan. Season the mixture with salt and pepper and mix well.
- Flatten a handful of the meat in the palm of your hand and place a cheese cube into the center. Wrap the meat around the cheese and form a meatball.
- Peel and boil the potatoes in salted water and fry the bacon. Season the cooked potatoes with salt and mash them until smooth. Chop the bacon into small pieces and add them to the mashed potatoes.
- Flatten a handful of the mashed potatoes in the palm of your hand and place a meatball into the center. Mold the mashed potatoes around the meatball so that it is completely encased.
- Dredge the mashed potato meatball in flour, egg, and panko bread crumbs. Repeat with the remaining ingredients.
- Fry the mashed potato meatballs until golden brown.
