Among the thousands of different varieties of bread that are enjoyed all around the world, there’s one type of bread that holds a special place in our hearts: focaccia. The origins of this Northern Italian flat bread can be traced back to ancient times and is traditionally made from yeast dough and topped with plenty of olive oil, salt, herbs, and other ingredients. And even though we love and respect the classic way of making focaccia, we wanted to give it a modern twist and bring it firmly into the 21st century. That’s why we’ve come up with 5 bright and colorful focaccia recipes that are sure to add a pop of color to your life!
You’ll Need:
For the light focaccia dough:
- 4 cups flour
- 1 packet dry yeast
- 2 tsp salt
- 2 tbsp olive oil
- 1½ cups lukewarm water
For the red focaccia dough:
- 4 cups flour
- 1 packet dry yeast
- 2 tsp salt
- 2 tbsp olive oil
- 1½ cups beet juice
For the dark focaccia dough:
- 4 cups flour
- 1 packet dry yeast
- 2 tsp salt
- 2 tbsp olive oil
- ¼ cup food-grade coconut ash or activated charcoal + 1½ cups water
Here’s How:
a) For the focaccia dough, combine the flour, dry yeast, salt, and olive oil in a bowl. Repeat for each dough you want to make (if you want to try all 5 recipes, you’ll have to make 5 doughs: 3 light, 1 red, and 1 dark).
b) For the light focaccia dough, add 1½ cups of lukewarm water to the first bowl. For the dark focaccia dough, dissolve ¼ cup food-grade coconut ash in 1½ cups of water and add it to the second bowl. For the red focaccia dough, add the beet juice to the third bowl. Mix all the doughs with your hands and then knead until no longer sticky.
c) Cover the doughs and let them rise for about 1 hour.
1. Mosaic Focaccia
You’ll Need:
- light focaccia dough
- 10-inch springform pan
- red onion
- orange & yellow bell pepper
- black olives
- cherry tomatoes
- green asparagus tips
- pimento-stuffed green olives
- olive oil
Here’s How:
1.1 Line a baking tray with parchment paper and place the springform pan in the center. Add the light focaccia dough to the springform pan and shape it to the contours of the pan.
1.2 Top the focaccia with red onion, yellow and orange bell pepper, black olives, cherry tomatoes, green asparagus tips, and pimento-stuffed green olives, as shown in the video. Finally, brush olive oil over the dough.
1.3 Put the mosaic focaccia in a preheated oven set to 400°F and cook for about 20 minutes or until golden brown.
2. Wreath Focaccia
You’ll Need:
- light focaccia dough
- 10-inch springform pan
- juice glass
- black & green olives
- grape tomatoes
- red & orange bell peppers
- radishes
- red onion
- cauliflower
- sage
- parsley
- olive oil
Here’s How:
2.1 Line a baking tray with parchment paper and place the springform pan in the center. Add the light focaccia dough to the springform pan and shape it to the contours of the pan. Remove the pan and use a juice glass to cut out a hole in the center.
2.2 Decorate the dough with olives, cherry tomatoes, bell peppers, radishes, red onion, and cauliflower to create a beautiful flower wreath pattern and garnish with sage and parsley.
2.3 Brush olive oil over the dough, transfer the focaccia to a preheated oven set to 400°F, and cook for about 20 minutes or until golden brown.
3. Meadow Focaccia
You’ll Need:
- light focaccia dough
- red onion
- grape tomatoes
- scallion
- black olives
- fresh rosemary & thyme
- olive oil
Here’s How:
3.1 Line a baking tray with parchment paper, spread out the light focaccia dough in the center of the tray, and brush olive oil over the dough.
3.2 Decorate the dough with red onions, grape tomatoes, scallions, black olives, and rosemary and thyme sprigs.
3.3 Transfer the focaccia to a preheated oven set to 400°F and cook for about 20 minutes or until golden brown.
4. Heart Focaccia
You’ll Need:
- red focaccia dough
- 10-inch heart-shaped springform pan
- green asparagus
- red onion
- black olives
- yellow bell pepper
- cauliflower
- olive oil
Here’s How:
4.1 Line a baking tray with parchment paper and place the heart-shaped springform pan in the center. Add the light focaccia dough to the springform pan and shape it to the contours of the pan.
4.2 Top the red dough with green asparagus, red onion, black olives, yellow bell pepper, and cauliflower in a nice pattern.
4.3 Transfer the focaccia to a preheated oven set to 400°F and cook for about 20 minutes.
5. Starry Night Focaccia
You’ll Need:
- dark focaccia dough
- 10 x 15-inch pan
- star-shaped cookie cutters
- olive oil
- flaky sea salt
- white onion
- radishes
- yellow carrot
Here’s How:
5.1 Spread the dark focaccia dough over the pan and brush olive oil over it.
5.2 Sprinkle flaky sea salt over the dough as seen in the video. Use star-shaped cookie cutters to cut out stars from the radishes and arrange them on the dough. Do the same with a smaller star-shaped cookie cutter for the yellow carrot. Cut the onion into the shape of a moon and add it as the crown jewel to your starry night focaccia.
5.3 Transfer the focaccia to a preheated oven set to 400°F and cook for about 20 minutes.
