This recipe requires one pot, saves time and water, and delivers a meal that’s packed full of vegetable power! 

Farmers Market Pasta

Ingredients
  

  • 150 g spaghetti
  • 1/2 cup mixed bell peppers
  • 1/3 cup zucchini
  • 1/2 unit red onion
  • 1/2 cup broccoli
  • 1/2 cup eggplant
  • 5 unit cherry tomatoes
  • 1 oz arugula
  • 1 1/2 cups water
  • 1/2 cup white wine
  • 3 tbsp vinegar
  • 1 pinch salt
  • 2 cloves garlic
  • 1 tbsp paprika powder
  • 2 tbsp olive oil

Instructions
 

  • Wash all vegetables and place them in a pot, followed by the dry spaghetti noodles. Add the liquid ingredients, as well as the spices.
  • Bring to a boil, and stir the ingredients together. Now cover the pot and let simmer for 8 minutes.
