Farmers Market Pasta
A quick and easy one-pot pasta dish packed with vegetables.

- 150 g spaghetti
- 1/2 cup mixed bell peppers
- 1/3 cup zucchini
- 1/2 unit red onion
- 1/2 cup broccoli
- 1/2 cup eggplant
- 5 unit cherry tomatoes
- 1 oz arugula
- 1 1/2 cups water
- 1/2 cup white wine
- 3 tbsp vinegar
- 1 pinch salt
- 2 cloves garlic
- 1 tbsp paprika powder
- 2 tbsp olive oil
Instructions
- Wash all vegetables and place them in a pot, followed by the dry spaghetti noodles. Add the liquid ingredients, as well as the spices.
- Bring to a boil, and stir the ingredients together. Now cover the pot and let simmer for 8 minutes.
