Along with milk and bread, eggs are one of life’s essentials that can be found in nearly all kitchens. Whether it’s for making a cake batter or preparing Sunday breakfast for a loved one, eggs can do it all. That’s why we’ve put together the following tribute video to showcase our finest egg recipes…
1. Scotch Eggs in Falafel
You’ll need (for three eggs):
For the falafel:
- 2 green onions
- 7 oz drained chickpeas (from the can)
- 1 tbsp cilantro, chopped up
- 1 tbsp parsley, chopped up
- 1 egg yolk
- 2 garlic cloves, chopped up
- 1 tbsp olive oil
- 1 tbsp lemon juice
- ½ tsp cumin
- ½ tsp salt
- ½ tsp cilantro
- ½ tsp baking powder
- 0.7 oz flour
- 0.7 oz breadcrumbs
You’ll also need:
- 3 eggs
- some flour
- oil for frying
Here’s how:
- Add all of the ingredients for the falafel — apart from the baking powder, flour, and breadcrumbs — into a bowl and puree them until you have a nice even mixture. Now you can mix in the baking powder, flour, and breadcrumbs.
- Place a large tablespoon of falafel mix between two sheets of food wrap and press it flat using your hands.
- Boil the eggs for five and a half minutes. Once done, peel the eggs and turn them in the flour.
- Place an egg on the flattened-out falafel mix and use the food wrap to enclose it in the mixture, making sure there is no egg showing. Repeat this for the other two eggs.
- To finish, fry the eggs in oil.
2. Fried Deviled Eggs
You’ll need (for 6 servings):
- 4 eggs
- 2 tbsp mayonnaise
- 1 tbsp ketchup
- 1 tbsp mustard
- salt and pepper
- ⅓ cup flour
- ⅔ cup breadcrumbs
- oil for frying
Here’s how:
- Cut the hardboiled eggs in half lengthwise and set aside the yolks in a mixing bowl.
- Mix the yolks with mayonnaise, ketchup, and mustard until smooth and then season with salt and pepper. Spoon the mixture into a piping bag.
- While heating the oil, dip the egg whites in flour, beaten egg, and then breadcrumbs. When the oil is hot, fry the breaded egg whites until golden brown.
- When cooled slightly, pipe the yolk mixture into the indentation of the fried egg whites.
3. Fried Egg in a Bell Pepper Ring
You’ll need (for two servings):
- 1 bell pepper
- 1 tbsp butter
- 1 medium-sized tomato
- 2 eggs
- salt and pepper
- fresh dill
Here’s how:
- Cut off the top and bottom of the pepper, remove the seeds, and cut into thick rings.
- Melt the butter in a pan and lightly cook both sides of a pepper ring. Place a slice of tomato inside the ring, and pour your egg on top. Season with salt and pepper.
- Cover the pan and let cook for 10-12 minutes. Finally, season with dill and serve.
4. Home Fry Egg Skillet
You’ll need:
- 5 medium-sized potatoes
- vegetable oil for frying
- salt and pepper
- 3.5 oz bacon
- 1 onion, diced
- 1 garlic clove, chopped up
- 3 eggs
- 1 tomato, cut into slices
- ¼ cup spring onions, chopped
Here’s how:
- Peel the potatoes and cut them into small cubes. Heat the oil in the pan, add the potato cubes and season with salt and pepper.
- When the potatoes have simmered for a while, add some bacon, onion and garlic, and fry the ingredients well.
- Now make three troughs in the pan and crack the eggs into them. Add some tomato slices, cover the pan with a lid and fry everything for five more minutes. Garnish the finished dish with spring onion.
5. Green Egg & Ham
You’ll need (for 1 serving):
- 1 avocado
- 1 poached egg
- 5 slices bacon
- oil
Here’s how:
- Halve the avocado and remove the seed. Widen the hole in the center so that it’s large enough to snugly fit a hard-boiled egg. Then carefully remove the rind from the avocado with a spoon.
- The egg should be poached. The best method is to spread a sheet of cling film over a small bowl and crack open the egg over the film, being careful not to break the yolk. Draw the cling film together and close with a twisty tie or a bag clip. Cook the cling film bag in simmering water for 5 minutes. You should end up with a shape that perfectly fits the avocado.
- Carefully peel the poached egg and place it in one half of the avocado, then cover it with the other half. Now wrap the two halves together with slices of bacon, fully covering the exposed avocado flesh.
- Now brown the bacon on all sides in a frying pan with just a touch of oil to keep it from sticking.
