Ingredients

  • 1/2 cup honey
  • 1 3/4 sticks butter
  • 8 cups flour
  • 1 2/3 cups powdered sugar
  • 1/2 cup Easter eggnog
  • 2 eggs
  • 1 tbsp turmeric
  • 4 pieces edible wafer paper
  • 1 3/4 cups powdered sugar
  • 1 tbsp lemon juice
  • green food coloring
  • 3/4 cup crushed pistachios
  • 12 fondant carrots
  • 2 gummy Easter Bunnies
  • 1/3 cup jelly beans
  • 1/3 cup sprinkles
  • 7 oz green fondant
  • chocolate eggs & bunnies
  • Pocky sticks
  • cotton candy

Instructions

  • Preheat the oven to 300°F and line a baking tray with parchment paper. For the cookie cottage, heat the butter and honey in a saucepan on the stove until the butter melts, then remove the saucepan from the heat and let the mixture cool down slightly.
  • Combine the flour and powdered sugar in a large mixing bowl, then add in the honey mixture, egg, Easter eggnog, and turmeric. Knead all of the ingredients together by hand until a smooth dough forms. Roll the dough into a ball, wrap it in plastic wrap, transfer it to the refrigerator, and let it chill for 30 minutes.
  • For the walls of the cookie cottage, dust a clean work surface with flour and roll out about ½ of the dough so that it's an even thickness. Cut the edible wafer paper into 4 separate 5 x 4-inch rectangles and use them as stencils to cut 4 rectangles out of the rolled-out dough. Place the rectangular pieces of dough on the baking tray, then use a cookie cutter or a knife to cut 2 small circles out of 2 of the rectangular pieces of dough and 2 small circles, a square, and bunny ears out of 1 of them.
  • For the roof of the cookie cottage, roll out the rest of the dough and place it in a 7-inch oven-safe bowl. Press the dough firmly against the sides of the bowl and cut off any protruding edges. Place a 6-inch oven-safe bowl on top of the dough to weigh it down in the oven and place the cookie cottage roof on a baking tray. Transfer both baking trays to the oven and bake the cookie cottage walls at 300°F for 20 minutes and the cookie cottage roof for 30 minutes. Once they're done baking, let the pieces of the cookie cottage cool.
  • For the green icing, beat together the pasteurized egg white and powdered sugar, then add in the green food coloring and lemon juice. Once everything is combined, immediately transfer the green icing to a piping bag to prevent it from hardening too quickly.
  • Remove the cookie cottage roof from the 2 oven-safe bowls and carefully flip it over onto your work surface. Pipe some icing where you'd like the chimney of the cottage to be, then stack the 4 circular cookies on top of one another, piping more icing between each cookie to secure them together. Pipe icing thinly over the entire roof, spread it evenly over its surface, sprinkle the crushed pistachios on top, and lightly press them into the roof.
  • For the cookie cottage walls, pipe some icing onto the 3 rectangular cookies with shapes cut out of them and stick a piece of edible wafer paper to the icing on each of them. Pipe some icing onto the edges of the rectangular cookies and stick them together in the shape of a box, then let the icing dry.
  • Roll the green fondant out into a circle. Place it on a cutting board or cake platter and place the walls of the cookie cottage on top. Use the icing to stick fondant carrots and gummy Easter Bunnies on the walls of the cookie cottage and stick pieces of Pocky Sticks in the circular windows of the cottage.
  • Carefully place the roof on the cottage. Poke a wooden skewer into the chimney of the cottage and insert cotton candy onto the wooden skewer so that it looks like smoke is coming out of the chimney. Decorate the yard and roof of the cookie cottage with chocolate eggs, chocolate bunnies, jelly beans, and sprinkles.
