Ingredients

  • 2 tbsp olive oil
  • 6 eggs, separated
  • salt & pepper to taste
  • shredded mozzarella cheese
  • prosciutto strips
  • sun-dried tomatoes strips
  • 10 eggs, separated
  • 1 cup flour
  • 2 eggs, whisked
  • 2 cups bread crumbs
  • 4 cups cooking oil for frying

Instructions

  • Heat some olive oil in a pan over medium heat and separate the eggs. Whisk the egg yolks, pour them into the pan, and season with salt and pepper. Sprinkle shredded mozzarella cheese on top as soon as the egg yolk omelet starts to set.
Fold the egg yolk omelet in half. Whisk the egg whites and pour half of the mixture next to the folded egg yolk omelet in the pan.
Spread prosciutto strips over the egg whites as soon as they start to set.
Fold the egg yolk omelet over the egg white section as soon as it's partially set.
Pour the rest of the whisked egg whites into the empty side of the pan and spread sun-dried tomato strips on top.
Once the egg whites have set, fold the rest of the omelet over the egg white section. Cover the pan with a lid and cook the omelet until it's done.
  • First separate the eggs. Whisk the egg yolks and the egg whites and pass each mixture through a sieve into separate bowls. Fill the compartments of an ice cube tray about ¼ full with the egg whites and briefly freeze until the upper layer of the egg whites have set.
Add the egg yolks to the ice cube tray compartments until they're about ¾ full. Put the tray back in the freezer until at least the upper layer of the yolks have set.
Fill the ice cube tray compartments with the rest of the egg whites and freeze until the egg cubes are completely frozen. Then remove the frozen egg cubes from the tray.
Heat some oil in a deep pot to about 325°F. Dredge the frozen egg cubes in flour, egg, and bread crumbs and fry in the hot oil.
