Pancakes are fantastic – especially a tall mountain of them. What’s even better is a whole cake made of pancakes and this is quite easy to make. The result still looks as delicious as if you had spent hours making it!
Crepes Cake
Ingredients
- 1/2 cup cream
- 2 tsp vanilla sugar
- 9 oz mascarpone
- 6 tbsp raspberry jam
- 2 cups milk
- 4 eggs
- 2 cups flour
- 1/4 cup melted butter
- Berries as decoration (optional)
Instructions
- Beat cream mixed with vanilla sugar. Add mascarpone and raspberry jam (or another kind of jam).
- Mix the milk and eggs. Slowly pour in the flour and keep stirring to avoid clumps. Add vanilla sugar and melted butter.
- Bake roughly 10 thin pancakes. Allow them to cool off.
- Lay a pancake on a large plate and spread a few spoonfuls of cooled berry cream on top. Repeat to form a stack.
- Cover the pancake stack with plastic wrap and place in the fridge for one hour.
- Decorate with fresh berries or any other kind of fresh fruit.
