And what better way to do that than to create a stunning homemade cake designed to bring out the inner child in the birthday boy or girl? This confetti birthday cake looks as fun on the outside as it does on the inside – it’s decorated like a giant melting candle, plus it’s topped off with delicious cream cheese frosting and edible chocolate candles! From the delicious taste right down to its fun design, nothing can hold a candle to this cake!
Confetti Birthday Cake with Cream Cheese Frosting and Edible Chocolate Candles

Ingredients
- 9 egg whites
- 1.75 cups sugar
- 3 cups flour
- 0.67 cup vegetable oil
- 0.75 cup milk
- 0.75 cup rainbow sprinkles
- 0.67 cup cream cheese, chilled
- 0.75 cup powdered sugar
- 1.67 cups heavy cream, chilled
- 9 oz blue chocolate Candy Melts
- 9 oz pink chocolate Candy Melts
- pine nuts
- 2 cups powdered sugar
- 0.33 cup lemon juice
Instructions
- Preheat the oven to 350°F. For the confetti cake, beat the egg whites and sugar in a large mixing bowl with a hand mixer until a firm meringue forms. Sift the flour through a sieve directly into the mixing bowl, then carefully fold in the flour, vegetable oil, milk, and rainbow sprinkles.
- Flip an 8-inch oven-safe plate over and place it on top of the base of the 8-inch springform pan. Cover the plate with a piece of parchment paper and secure the ring of the springform pan around the base, plate, and parchment paper. If you don't have an 8-inch springform pan that's large enough (about 5 inches tall), then stack 2 rings on top of one another.Pour the cake batter into the springform pan, transfer the springform pan to the oven, and bake at 350°F for 85 minutes. Once the confetti cake is done baking, take it out of the oven and let it cool for at least 2 hours, preferably overnight.
- For the cream cheese frosting, beat together the cream cheese, powdered sugar, and heavy cream with a hand mixer until the consistency of the frosting becomes light and fluffy. Be sure not to beat the frosting too much, or you'll overwork the heavy cream. If you'd like the frosting to hold better, add about 1 tablespoon of unflavored gelatin powder to the mixture.
- For the chocolate candles, fill 2 tall shot glasses with colored chocolate Candy Melts – blue in one glass and pink in the other. Use a double boiler to melt the colored chocolate. Once the colored chocolate has melted, insert 4 extra-wide straws into each glass, filling the straws with the colored chocolate while it's still liquified. Seal the top of each straw using your finger and pull the chocolate-filled straws out of the glasses. Once all of the straws have been removed from the glasses, let everything cool and squeeze the colored chocolate candles out of the straws.
- Remove the cake from the springform pan, flip it over onto a serving platter, and cover it with a thick layer of cream cheese frosting. For the icing, stir together the powdered sugar and lemon juice until the mixture becomes smooth and creamy. Transfer the icing to a piping bag and pipe it along the top edge of the cake so that it drips down and creates a wax-like effect. Place the edible chocolate candles on top of the cake, heat the tip of the candles with a lighter, and insert 1 pine nut into each one. Once you're ready to serve the cake, light the pine nuts and then it's time for the fun birthday celebrations to begin!
