Coconut Curry Pork Loin
Equipment
- Large Roasting Pan
- Cooking twine
Ingredients
- 4 lb pork loin
- 3 tbsp vegetable oil
- salt & pepper to taste
- 2.5 cups coconut milk
- 1/3 cup curry powder
- 2 cloves garlic, minced
- 12 oz raw shrimp
- 5 red chili peppers
- 4 sprigs thyme
Instructions
- Brush the vegetable oil over the pork loin and generously season with salt and pepper. Secure cooking twine around the seasoned pork loin and place it in a large roasting pan.
- Combine the coconut milk, curry powder, and garlic and fold in the raw shrimp. Pour the mixture over the pork loin in the roasting pan and add the red chili peppers and thyme.
- Transfer the roasting pan to a preheated oven and cook at 400°F for 1 hour. Remove the cooking twine from the coconut curry pork loin before serving.
