Ingredients
- 4.5 oz melted dark chocolate
- 3.5 oz butter
- 4.5 oz sugar
- 1 tbsp cocoa powder
- 2 egg yolks
- 1 egg
- 6 egg whites
- 1 pinch salt
- 7 fl oz cream
- 2 sheets gelatin
- 7 oz dark chocolate
- 17 oz whipped cream
- 9 oz soft butter
- 2 lemons (juice and zest)
- 3.5 oz powdered sugar
- 3.5 oz dark chocolate
- 3.5 fl oz cream
- 0.5 lemon peel
- 3.5 oz dark chocolate
- 2 tbsp soft butter
- 10.5 oz melted chocolate
Instructions
- Melt the dark chocolate and butter together. Mix in the sugar and cocoa powder. Add the egg yolks and whole egg, then fold in the beaten egg whites and a pinch of salt.
- Whip the cream and dissolve the gelatin in it. Melt the dark chocolate and fold it into the whipped cream. Fill a piping bag with the mousse.
- Mix the soft butter with the lemon juice, zest, and powdered sugar. Fill a piping bag with the lemon cream.
- Melt the dark chocolate and mix it with the cream and lemon peel. Add the soft butter and mix until smooth.
- Melt the chocolate and use it to create chocolate leaves for decoration.
