Ingredients
- 10 eggs for chocolate cake
- 1.75 cups sugar for chocolate cake
- 2 cups cocoa powder for chocolate cake
- 3 cups flour for chocolate cake
- 2.75 cups ground hazelnuts for chocolate cake
- 2 tbsp baking powder for chocolate cake
- 1 tsp salt for chocolate cake
- 5 sticks butter softened, for chocolate cake
- 1 chocolate bar grated, for chocolate cake
- 2 eggs for carrot cake
- 4 medium carrots grated, for carrot cake
- 1 orange zest & juice, for carrot cake
- 0.67 cup sugar for carrot cake
- 1 cup ground almonds for carrot cake
- 0.33 cup flour for carrot cake
- 0.33 cup corn starch for carrot cake
- 2 tsp baking powder for carrot cake
- 0.5 stick butter melted, for carrot cake
- 1.25 cups heavy cream for chocolate ganache
- 24 oz semi-sweet chocolate chips for chocolate ganache
- 5 waffle cones extra
- 5 wooden skewers extra
- cookie crumbs to garnish
- fresh mint to garnish
Instructions
- Preheat the oven to 350°F. Combine the ingredients for the chocolate cake and pour the batter into a greased loaf pan.
- Push 5 waffle cones into the chocolate cake batter in the loaf pan. Combine the ingredients for the carrot cake and divide the batter between the 5 waffle cones.
- Bake the chocolate carrot cake in the preheated oven for 2 hours and let the cake cool afterwards.
- For the chocolate ganache, heat the heavy cream in a saucepan and add the chocolate chips, stirring constantly until smooth. Insert a skewer in each carrot cake cone and pour the chocolate ganache over the entire cake.
- Sprinkle light and dark cookie crumbs over the chocolate ganache while it is still wet. Remove the skewers from the carrot cake and stick a sprig of fresh mint into each empty hole.
