There’s just something so soothing about a perfectly round circle, and only one thing could make it better: being able to bite right into it! And that’s exactly what you’ll get with this spherical brownie cake filled with layers of vanilla pudding and fruity jam – all of which is encompassed in a chocolate hard shell. Yummy!

  • 4-inch chocolate sphere mold
  • Sheet pan

Ingredients
  

  • 4 oz white chocolate
  • 9 oz dark chocolate
  • 2 tbsp sugar
  • 13 fl oz milk
  • 1.5 oz instant vanilla pudding mix
  • 7 oz butter
  • 2 oz powdered sugar
  • 6 oz butter
  • 3 large eggs
  • 3.5 oz brown sugar
  • 2.5 oz flour
  • 0.5 tsp baking powder
  • 4 oz red jam (such as strawberry, raspberry, or cherry)

Instructions
 

  • Preheat the oven to 350°F. Melt the white and dark chocolate over a hot water bath. Splatter a few spoonfuls of the melted white chocolate in both of the chocolate spheres. Divide the melted dark chocolate between the two spheres and swirl the mold around until the spheres are fully coated. Turn the mold upside down and let the excess chocolate drip into a separate bowl.
  • Add the butter to the same bowl as the excess chocolate, place the bowl over a water bath, and stir the melted contents until smooth. Once it has cooled, add the eggs, brown sugar, baking powder, and flour and mix everything with a mixer. Pour the batter on a sheet pan lined with parchment paper, smooth it out, and bake for 15 minutes.
  • For the vanilla cream, heat the instant pudding mix, sugar, and milk in a pot and bring to a boil. In a separate bowl, mix the room temperature butter and powdered sugar with a mixer until frothy. Once the pudding has cooled, gently fold it into the butter mixture. Return to the cooled brownie cake and use a small dish or bowl to cut out 6 circles that are slightly smaller than the chocolate sphere molds.
  • Place two small bowls on a plate so that you can safely balance the chocolate balls, and then start layering. Start with a spoonful of vanilla cream, followed by a brownie circle and a dollop of jam. Keep layering until you have three layers and then repeat with the other chocolate ball. Finally, spread a layer of melted chocolate on the edges of the two chocolate balls so that you can stick them together.
  • Carefully cut the ball with a warm knife and look at how nicely the chocolate ball is layered inside. What a pretty and extraordinary dessert - perfect for a special occasion like a birthday or anniversary!
